Inside the new hotel in Florence Ville sull’Arno there’s a lovely restaurant called Flora & Fauno. Today, we present the person who runs the kitchen every day: he is the Chef Marco and we want introduce him with a funny interview. IdentiCHEF NAME: Marco Offidani PARTICULARITY: always in a good mood RESIDENCE: behind the cookers of Flora & Fauno restaurant in Florence First of all Goodmorning and thanks for your time that you gave us in your kingdom. It would be a good practice start the interview by asking what is your preferred dish to cook, but we want to know more about you so we ask you… what is the dish you hate to cook? <<Good answer, but I don’t have dishes that I don’l like to cook. The love for I do is always my secret ingredient.>> Noah in his ark saved seven couples of animals, which ingredients would you never leave on land? <<Definitely I would save rice, fresh fish and vegetables. Finally, I could never stay without all the spices: I use a lot of them because they give that extra touch to most dishes. >> A four hands dinner with Gordon Ramsey, Joe Bastianich, Antonino Cannavacciuolo or if you want something done, do it yourself? <<They are all great Chef, but I would work with Cannavacciuolo. I think that a four hands italian dinner could create delicious dishes.>> Now we ask you to complete the sentence: if I hadn’t become a chef I’d have done… << … an astronaut! Since childhood I have always loved the space and I would like to discover new worlds and maybe even new cookings. >> Carlo Cracco says that “To be cool you have to use the shallot”, but if we want just cooking well? <<You can also use shallot, but the cooking is especially passion and challenge every day; without these ingredients you can not be a first Chef.>> To finish the interview we want to know who is your master, the person from which you learned more. <<Surely I must say thanks to my first Chef Leo Baccherini because he was my mentor. I remember with pleasure the time when we worked together at the Savini restaurant in Milan. >> Thanks a lot to chef Marco that granted us this funny interview. If you want to know him or if you want to taste his delicacies you can find him in the kitchen of the Flora & Fauno restaurant situated in Florence. We recommend to try his beet risotto because it is a goodness for the palate!
